Major global food and nutrition issues, their determinants, and the strategies that in place to address them. Students identify major nutrition and food challenges in a country or region as well as the policies and programs that have proven successful in addressing those challenges.
• Define hunger and nutrition issues globally. • Apply the UNICEF malnutrition framework to identify distal, intermediate, and proximal determinants of malnutrition in a given population. • Use the above-mentioned determinants to systematically identify policy and program strategies that have been shown to improve the nutritional status or food insecurity problems in a given population. • Research and write a convincing policy paper that diagnoses major nutrition and food challenges in a country/region, and that systematically identifies programs/policies to address these challenges.
